Perfectly Hard Boiled Eggs...                          Courtesy of the Instant Pot!

I can't even begin to tell you how many times I'm asked, "How can I get hard boiled eggs to PEEL easily??"  What's the best recipe?  How long should I boil them?  Do I need salt? Should I flash cool them as soon as they stop cooking???
How do I get them to stop looking like this??

The questions go on and on...  And then ... ENTER ... the Instant Pot. :) ​
​I call it the "FAST Slow Cooker."  It's really that awesome!  Not only will your hard boiled eggs come out perfectly every time, ANYTHING else you cook in it will, too!

You can literally place ALL your ingredients into it, secure the lid, set the timer, and everything will be cooked perfectly inside in a fraction of the time of a crockpot (but with the same delicious taste!) 
This new gadget is right up there with my Cuisinart Mixer (yes, the big heavy one :) ) and my Vitamix.  It's SUCH a convenient kitchen tool, and I love sharing & getting new recipes to use with it.  You're more than welcome to join my Facebook Instant Pot group for more RECIPES & TIPS!

And even though I'm singing its praises, I don't give endorsements easily...
​In today's day and age, people will stop listening very quickly if you steer them wrong even once... I'm the same way, so I understand :)  

All this being said, the Instant Pot is life changing!! :)  

This is the one that I use.  I love it!!
​It's the 7-in-1 6-quart Instant Pot Duo.

​I prefer it over the 5-quart size when I make soups and chilis, and I think the 8-quart size would be much larger than I need on a daily basis.  

​And so, here's the recipe that's changed my approach to HB Eggs forever :) 

Drumroll, please :) ​
INGREDIENTS:
  • Pasture raised eggs (ideally) cage free, vegetarian fed & organic.
  • 1 cup water
DIRECTIONS:
  1. Plug in your Instant Pot.   
  2. Pour one cup of COLD water in the bottom of the stainless bowl.
  3. Place in a stainless strainer/steamer basket (there is one that comes with the IP that is great!)
  4. Place 6-8 chilled eggs on TOP of the opened steamer basket.  Do NOT submerge your eggs.
  5. Put the lid on & secure. 
  6. Power on and press the MANUAL button.
  7. Adjust the timer to 8 minutes on the display.
  8. Close and lock the lid and make sure the vent on top is closed.
  9. Let the IP cook those eggs to perfection!...  and then do the quick release valve.
  10. Peel the eggs under cold running tap water and serve immediately.
    If you are not serving immediately, stop the cooking process by submerging the eggs in a cold water bath for roughly 5 minutes.

  11. Transfer eggs to fridge or serve. 
IF YOU ARE COOKING HARD BOILED EGGS ON A STOVETOP:

INSTRUCTIONS: 
  1. PLACE eggs in saucepan large enough to hold them in single layer. ADD cold water to cover eggs by 1 inch. HEAT over high heat just to boiling.
  2. REMOVE from burner. COVER pan. LET EGGS STAND in hot water about 12 minutes for large eggs (9 minutes for medium eggs; 15 minutes for extra large).
  3. DRAIN immediately and serve warm. OR, cool completely under cold running water or in bowl of ice water, then REFRIGERATE. 

Hard boiled eggs are a great on-the-go snack or breakfast! They can easily be added to any salad for a serving of protein, too!  I use them as a snack or breakfast almost daily!
