Grilling kabobs is hands-down one of my favorite summertime meals! It's kind of like the "outdoor" version of a one-skillet meal! Just marinate your protein, cut up your veggies, assemble your kabobs, and GRILL!
The flavors mix together perfectly, you can make extra for the next day's lunch. It's SO quick & easy! Done and DONE!
This is the IDEAL meal prep - lots of lean protein, veggies, and a fruit - that I can use for several more meals!
Eating a rainbow is easy when you grill all these awesome veggies!
Hands down - my days are *infinitely* better when I work out in the mornings! I am able to set the tone for my day. I feel (a bit :) more in control of my life and my energy. I feel like a different person than the one who just wanted to hit snooze (again & again) 40 minutes earlier. It's my time to get focused & I get DETERMINED to create a great day! My emotional energy becomes HIGH - so instead of trying to pump myself up for hours to tackle the day, I'm already in the groove! So, my TOP 5 REASONS for working out first thing???
Eggplant is absolutely one of those veggies you look at in the grocery store and either know exactly what you want to make with it ... or just keep on going past wondering, "who actually buys those things", right?? :) I've made this recipe a LOT during the last year, but when a friend in my fitness group shared a similar recipe the other night, I was inspired to make it this week! :)
