Grilling kabobs is hands-down one of my favorite summertime meals! It's kind of like the "outdoor" version of a one-skillet meal! Just marinate your protein, cut up your veggies, assemble your kabobs, and GRILL!
The flavors mix together perfectly, you can make extra for the next day's lunch.
It's SO quick & easy! Done and DONE!

Pair it with a side dish of Quinoa, Corn & Black Beans and you have a protein-packed & nutrient-dense meal that's FILLED with vitamins, minerals, & fiber!

Extra: This recipe is taken from Autumn Calabrese's FIXATE cookbook. Since I love having grilled veggies leftover, I added squash, eggplant, and yellow & green peppers! You can add as many types of veggies as you'd like!
