Grilling kabobs is hands-down one of my favorite summertime meals! It's kind of like the "outdoor" version of a one-skillet meal! Just marinate your protein, cut up your veggies, assemble your kabobs, and GRILL!
The flavors mix together perfectly, you can make extra for the next day's lunch. βIt's SO quick & easy! Done and DONE!
This is the IDEAL meal prep - lots of lean protein, veggies, and a fruit - that I can use for several more meals!
Eating a rainbow is easy when you grill all these awesome veggies! β

Serves 4 Container equivalents: 1 green, 1 red, 1/2 PURPLE INGREDIENTS:
Extra: This recipe is taken from Autumn Calabrese's FIXATE cookbook. Since I love having grilled veggies leftover, I added squash, eggplant, and yellow & green peppers! You can add as many types of veggies as you'd like!

Chicken skewers are really similar to the Mediterranean cuisine, kebab. I have had the opportunity to travel a lot in the Middle East. I believe that they are some of the most culturally interesting countries in the world. Their unique dish, the kebab is a great example. After talking to some locals, I found out that the dish has been in their country for many generations. Kebabs are strips of meat and vegetables skewered on a stick and then roasted.
